He has also specialised in travelling throughout the First,Second ,and Third Regions of Chile, working, investigating which has inspired him to write his book on «COOKING IN THE NORTH OF CHILE «. In order to achieve his objective of rescuing recipes for traditional dishes of the peoples in the North of Chile ,the author moved to Arica ,the Northern Gate to Chile , where he started his investigations and work, before moving gradually South to Iquique passing through the upper highlands and valleys between the cities: studying the culinary traditions and collecting recipes as he went. In this first stage of his investigation, the author travelled through every town in the first region. The author continued his investigations in the same Retailed manner in the Second Region ,taking in towns such as San Pedro de Atacama, La Pampa the old salpetre towns ,Mejillones, Taltal and the great modern metropolis of Antofagasta. Lo valioso de su investigación es que se efectúa un rescate del patrimonio cultural de los pueblos que habitan la ZONA NORTE DE CHILE, en un área de escasa difusión, pero de significati- va importancia, como lo es la cocina. Junto con recuperar y dejar testimo- nio de la cultura culinaria de dichos pueblos, el autor ofrece detalles y matices, de cómo se deben preparar los platos que nuestros antepasados degustaron por generaciones. Sus recetas permitirán a la gente del norte y de otras localidades, conocer de la preparación y confección de una singular carta gastronómica, que me- rece el apoyo de todos para ver la luz, a través de la publicación de un libro. Dobló su capacidad con la apertura de el importante yaci- miento de cobre llamado La Escondi- da, sus atractivos gastronómicos se deslizan desde el río Loa hasta Taltal por la zona costera, pescados y maris- cos son el fiel reflejo de la gastrono- mía natural nortina, su fauna típica puede ser contemplada por lobos marinos, tortugas de mar, pelícanos y golondrinas a orillas del mar, en el muelle de pescadores, pleno centro de la ciudad. The copper is exported from Chuquicamata through it and lately it has multiply its capacity with the opening of a new mining, which is called “La Escondida”. Its gastronomic attractiveness slip from the Loa river until Taltal, for the coastal area, fish and shellfish are the faithful reflection of the gastronomy natural nortina, its typical fauna is constituted by marine wolves, sea turtles, pelicans and swallows beside the sea shore. Esta se ubica a 300 km. del Océa- no Pacífico del cono sur continente sudamericano, situado en la zona andina desierto de Atacama del Nor- te Chileno. Además la II Región esta dividida en tres provincias: Tocopilla, Antofagasta y El Loa las que a su vez están subdivi- didas en comunas: Tocopilla:Tocopilla:Tocopilla:Tocopilla:Tocopilla: comunas de Tocopilla y Maria Elena. Antofagasta: Antofagasta: Antofagasta: Antofagasta: Antofagasta: Antofagasta, Mejillones, Taltal y Sierra Gorda. El Loa:El Loa:El Loa:El Loa:El Loa: Calama, San Pedro de Atacama y Ollague. It is located to 300 km. from the Pacific Ocean of the south cone of South American continent, the desert of Atacama of the Chilean North located in the Andean area. On the 4.000 meters we can find bushes like the queñoa. The gramineous ones form a kind of a carpets or « champas « on the surface and over the rocks. The highland’s fauna is diverse and among the camélidos there are gump, vicuñas, alpacas and flames. The hills water that surrends the economic development to agriculture gives life to the bushes, herbs (docas, cachiyuyo, tolo, totora, ferns), and autochthonous little trees (locusts, cha- ñar, and tamarugo). The water arrives to the reservoir San- ta Fe and Sloman, it generated energy to the Saltpeter Industry at the beginning of the XXth century. Now, the sloman regulates watering to the fields of Quillagua cultivation. cachiyuyo y espinillos, entre los 2.600 a 3.300 mts. Altura. Entre los 3.300 y 4.000 metros de la cordillera andina se encuentran arbus- tos y gramíneas capaces de subsistir en terrenos salinos, destacando entre ellos: el coirón, y la paja brava, ade- más se encuentran aves como parinas (flamencos), guallata, lechuza, tagua y patos silvestres, la que por naturale- za comparten con roedores y zorros. También encontramos en las alturas la famosa Llareta, con su hábitat del cón- dor, comparten enormes cactus que llegan a medir 3 metros, acompañan- do las alturas en estado salvajes el guanaco (camélidos). Sobre los 4.000 metros se encuentra arbustos como la queñoa. Las gramíneas forman una especie de alfombras o “champas” en la superfi- cie y sobre las rocas. La fauna del altiplano es diversas y entre los camélidos se encuentran: guanaco, vicuña, alpaca y llamas Las aguas cordilleranas entregan al de- sarrollo económico a la agricultura dando vida a los arbustos, yerbas (docas, cachiyuyo, tolo, totora, hele- chos), arboles autóctonos (algarrobos, chañar, y tamarugo). Las aguas llegan a los embalse santa fe y sloman en donde a comienzo del siglo XX generaba energía a la Indus- tria Salitrera, actualmente el sloman regula riego a los campos de cultivo de Quillagua. The tamarugo belongs to the order of the leguminous, family minosaceae. It is an autochthonous species, which reaches up to 15 m of height, with trunks almost of 1 m. of diameter and an upoer diameter of approximately 15 to 20 m. Its new branches are thin and angular and they possess thorns of wide base of about 3 cm. of long. The fruit is a thick and short vegetable of 25 mm. approximately with form of peanut. El río Loa atraviesa la cordillera de la costa por un estrecho y profunda que- brada desemboca en la caleta el loa, en el Océano Pacífico, todos los ríos de la zona Atacameña nacen en las altas cordillera andina, siendo el río loa el único que atraviesa el desierto y desemboca en el océano. Existen numerosos riachuelos que atra- viesan quebradas como: jere, cámar, talabre, peine y socaire, dando aper- tura al desarrollo agrícola y ganade- ro. Bordeando el salar de Atacama por el camino que une San Pedro de Toconao, se llega al sector de tambilo, en donde se encuentra el Bosque Tamarugo que abarca una superficie de 370 hectáreas. El tamarugo pertenece al orden de las leguminosas, familia minosaceae. Se trata de una especie autóctona, la que alcanza hasta 15 m de altura, con troncos de casi 1 m. de diámetro y un diámetro de copa aproximadamente 15 a 20 m. Sus ramas nuevas son delgadas y angulosas y poseen espinas de base an- cha y de unos 3 cm. de largo. El fruto es una legumbre gruesa y cor- ta de aproximadamente 25 mm. con forma de maní. The population became sedentary in the second millennium B.C. after the domestication and cultivation. The domestication of llamas constituted a main activity in the obtaining of products, as meat, wool, leather and excrement like fertilizer and fuel. The archaeological evident samples have shown us hunters of gump, rodents and birds, they supplemented their diet with allowances gatherings of fruits like locusts, chañar and other wild vegetables, since they kept their allowances highlighting the grupal organization to approach their stocks on the whole. Ther were also gramineous on the opposing archaeological places. The nutritious diet was supplemented with the consumption of bird and fish, which were exchanged with the inhabitants of the coastal area, who lived far 200 km. Starting from the 1 millennium B. C. the population of hunters incorporated more and more to their diet some nutritious products of domestic plants. Small oasis of tilocalar (1.200 B. La población se volvió sedentaria en el segundo milenio A.C. por la do- mesticación de camélidos y larealiza- ción del cultivo. La domesticación de la llama constituyó una actividad prin- cipal en la obtención de productos, como ser: Carne, lana, cuero y el ex- cremento como fertilizante y combus- tible. Por medio de la arqueología hay muestran evidentes que, cazadores de guanaco, roedores y aves, comple- mentaban su dieta con alimentos con recolecciones intensivas de frutos como los algarrobos, chañar y otros vegetales silvestres. Guardaban sus ali- mentos destacando la organización grupal para abordar en conjunto sus existencias, además se hallaron las gramíneas en los sitios arqueológicos encontrados. La dieta alimenticia se complementa- ba con el consumo de ave y pescados intercambiando con los habitantes de la zona costera a más 200 km. A partir del 1er milenio A C. la pobla- ción de cazadores recolectores incor- poraron cada vez más en su dieta ali- menticia productos de plantas domés- ticas. En el arte rupestre se utilizaron diver- sas técnicas y en ella podemos encon- trar en toda la región atacameña como ser; Los petroglifos o grabado en piedra, son diseños que se efectuaban sobre la piedra misma, por medio incisiones realizadas con instrumentos más firme que la roca que hace de soporte de tal obra, los dibujos era posible for- marlo mediante golpes directos y con- tinuos sobre la roca, e incluso raspan- do para lograr formar las líneas, cur- vas y relleno. Los geoglifos son figuras de grandes dimensiones, que se realizaron en las laderas de los cerros o de las quebra- das, mediante acumulación de piedras pequeñas que contrastan con el fon- do del suelo. And the most remarkable engraving painting are in Peine, it has several prehispanic archaeological places. Among the ways to Chiu Chiu and Lasana, there are around 76 sculpters on panels of furious liparite, also at “Quebrada Seca” and on valleys and gulches of the Toconce rivers, Caspana, Cupo, Corte, y Hojalar Everything with an Andean style that obviously was diffused by the Incan tradition. En los alrededores de quebradas de Tambores y en la quebrada de Toconao, en ella es posible encontrar abundante conjuntos de petroglifos cuyos diseños corresponden a distin- tas épocas de desarrollo de la cultura atacameña. Y en cuanto a pictografía las más no- tables se encuentran en Peine, con va- rios sitios arqueológicos prehispá-nicos, en lo que respecta a petroglifos. Entre el camino de Chiu Chiu y Lasana en ella se puede encontrar alrededor de 76 forma de esculpido en paneles de piedra liparita, también quebrada seca, en valles y quebradas de los ríos toconce, caspana, cupo, corte, y hojalar. Todo ello con un estilo andino, que obviamente fue difundido por la tra- dición incaica. Solo tenemos que tener conciencia y saber que el alimento en su época era comido para complemento en la ali- mentación de los changos, muchas veces debido al intercambio de pro- ductos. Algunas comunidades se preocupan para defender sus aguas, y dejan de lado la unión y el trabajo asociativo que podría generan mucho más “por- que siempre para comer alcanza para todos”. Sus cualidades, siendo resistentes para todos los climas especialmente desérticos y utilizando nuevas técnicas de cultivos, fertilizantes, evitar plaga, irradiaciones, además seguirá siendo un alimento noble. Sin embargo, somos bastante influidos por los asiáticos, ejemplo de ello es el arroz y así como se ha aceptado, por- qué entonces no miramos la parte nutritiva en la cocina y apoyamos el consumo del grano en el mundo ru- ral, como la quinua. Desde el mar al altipla- no, pasando por los oasis, valles que- bradas y un desierto más áridos del mundo, pero Dios lo hizo vergel con su Pachamama, y el legado de las cul- turas incaica, quechuas, aymarás y del mismo pueblo atacameño, mantenien- do en si la comunidad el orgullo de su patrimonio cultural y rescatando lo propio otorgado por la naturaleza misma.
